The Brewery production area (the brewing floor) is operated by just seven members of staff. A similar number work in the cooler environment of the racking cellar below, which includes cask preparation. Support activities like bottling, engineering and fork lift operators collectively account for about another seven individuals.
Our goal is to produce a consistent product in spite of the vagaries of season and climate. To this end we are on duty throughout the seven day cycle during which each Gyle of beer is produced. For us, every brew is an adventure.
