Best Bitter Onion Bhajis

These delicious beery bhaji's are the perfect afternoon snack, starter or the perfect accompaniment to a selection of Indian treats.


  • 2 Large English Onions, finely sliced.
  • 8 Tbsps Whole Meal Flour 
  • Half Pint of Sussex Best.
  • 1 Tsp Turmeric
  • ½ Tsp Chilli Powder
  • ½ Tsp Ground Coriander 
  • ½ Tsp Ground Cumin
  • ½ Tsp Ground Ginger
  • Salt to taste
  • Sunflower Oil


  1. Mix the onion and spices.
  2. Add the beer to form a thick gloop, lift out teaspoons of mixture.
  3. Shallow fry in hot sunflower oil, both sides until golden brown.
  4. Serve with a quart of Best.
